Plant-based Recipes that I'm Currently Loving

Hmmm...did I shut off the oven? I can't remember. It's hardly off during this quarantine and I've been pumping out plant-based baked goods like they were going out of style.

And why not? Baking is an activity that I can share with my children, its indoors and I have a sweet-tooth the size of North Dakota. So, baking has become my hobby of choice..when I'm not cooking, that is.

I've discovered AMAZING recipes and interesting blogs written by like-minded plant-basers who have kept me in the know about delicious recipes AND convenient substitutions-- when I am out of a specific ingredient...which I usually am.

 

Cinnamon Rolls -- eat enough an they'll have to roll you out the door (that's the full title of the recipe)

If you're craving ooey-gooey cinnamon rolls, you'll find an easy recipe here. The first few cinnamon roll recipes I found online required yeast, which I happened to be fresh out of. This recipe doesn't require yeast and the ingredient list is pretty short. My favorite part: when you adjust the quantity that you want to bake, the recipe will automatically adjusts for you. Fantastic! I made six cinnamon rolls. And only six. If I had made 12, I would have eaten 6. Since I made 6, I ate 3 and with that, I am ok.

I used whole wheat flour because that is what I had on hand. I added a splash more almond milk to the recipe because my dough was a little dry.

 

Fun with Carrot Soup!

I also delighted my family with carrots. Yes... I said carrots! I prepared a delicious carrot soup, inspired by this recipe. What I loved about this recipe, besides the delicious creamy soup that it yields, was the ease in which I prepared it. I was able to prepare this soup in one pot with only a few ingredients. The soup is blended at the end so your chopping skills don't have to be perfect, like mine ;)

 

No-Bake Chocolate Peanut Butter...anything. I will eat anything that is chocolate and peanut butter...

These adorable no-bake bird nest cookies are eggs-ellent. I'll wait for you to stop laughing...Ok. Talk about simple--you don't even need your oven! I've made this recipe more than three times and each time, they're delicious. My kids loved them for Easter and Passover desserts (we celebrate both!) and, of course I love them because they're chocolate and peanut butter and I've yet to come across a better combination than those two!

I've been cooking and baking up a storm over the last month and I have to say...it's been relaxing, educational and tasty. It's always a plus when you can nourish your family, too, but who am I kidding? I'm doing the cooking so I usually get to decide what's goin' in the pot! I have a spare box of cereal for whomever doesn't agree with my choice ;)

It's just about dinner time so I've got to get back in the kitchen.
